Cooking: Sausages and Onion on Crispy Polenta

A quick and easy recipe for hot nights. Doesn't require a lot of ingredients and it's pretty filling.

1 tube of polenta
1 large red bell pepper
1 large onion
1/2 lb of your favorite sausage
1 teaspoon (I put about a tablespoon) of Italian seasoning
1 cup marinara sauce
1/3 cup water
6 pitted kalamata olives
2 tablespoons parsley


First cook the sausages. For me it takes about 15 minutes to get them the way I like. Then cut them up into about 1-inch slices, or as big or small as you want.









As the sausages as cooking cut the red pepper into thin slices. Then cut the onion into round slices. Stick 'em in a bowl for later use.










Once the sausages are done and cut up, cut up the polenta into slices, about an inch, and then cook them in a little bit of olive oil in a pan. Cook them for about 5 minutes on each side or until you think they are ready, on medium to high heat. Put aside.









In a pot fry the red peppers and onion in a dash of olive oil on medium to high heat. Cook until they are soft, about 5 minutes. Once cooked add the cut up sausages and the Italian seasoning to the pan and cook for about another 5 minutes (or until the sausages are brown if you didn't cook them enough before)









Once that is done, add the marinara sauce, water and olives. Bring to a boil, then simmer for about 2 minutes or until the sauce is the thickness you like.









Serve with parsley sprinkled on top, and enjoy!











I got this from the weight watchers book. I found it to be rough on my stomach but I sausages don't always agree with me, it's hit and miss. Marc loved it and he plans to make it again.
